Survivability and Release Process of Lactobacillus plantarum SU-LS36 Encapsulated with Native and Modified Taro Starch under Simulated Digestive Conditions

This research aimed to evaluate the viability, survivability, and release process of encapsulated Lactobacillus plantarum SU-LS36 in simulated gastric juice (SGJ), intestinal (SIJ), colon (SCJ). We tested four types encapsulations: native taro starch (NTS), modified (MTS) by heat moisture treatment (HMT), autoclaving-cooling-2 cycles (AC-2C), maltodextrin (commercial encapsulant). found that L. with AC-2C-modified showed highest viability SGJ (6.95 log CFU/g), SIJ (7.09 SCJ (7.85 CFU/g) after incubation up 4 h. AC-2C MTS dissolved or released more rapidly from its encapsulant material than NTS, HMT MTS, maltodextrin. The longest time was 3 h conditions, 2 SGJ, fastest (1 h) SCJ. through a dissolution (SGJ SCJ) pancreatin activity (SIJ). Conclusively, could maintain cells at 6.04 CFU/g fulfilled minimum requirement biovalue (MBV) probiotics set forth US FDA (6-7 CFU/g).
